LickiMat® Recipe Sweet Potato and Coconut Rice Pudding

Make an awesome LickiMat® treat that's so good you'd want to eat it yourself!

This yummy dog treat recipe is inspired by old school rice pudding that you probably loved as a kid. But this one is probably even better, with a bit of a Asian twist. I had a taste and it's delicious. It's bursting with coconut flavour, naturally sweetened with sweet potato.  To end is a lovely earthy nutty back note from the peanut butter, all bound together with the rice to add a lovely rich texture.

Australia is in love with foods from all over Asia. We take our inspiration from this amazing region, especially Thailand and Bali. Cuisine from these countries often uses coconut as an ingredient.
Coconut is currently the on trend food right now, and for many valid reasons. Not only does it taste delicious, it has so many health benefits for you and your dog. For dogs coconut elevates the metabolism and gives energy, protects from illness and assists in healing. It is great for skin and coat condition, improves digestion, and also reduces allergic reaction.

Dogs love the taste of sweet potato. It's high in fibre, low in fat and is packed with vitamin B6, vitamin C, manganese and the powerful antioxidant beta-carotene. This is essential for vision, growth, muscle strength, skin and coat condition. Nice and healthy and great for your dog's overall well-being.

Four simple ingredients and Lickimat Playdate

Just to add a little bit extra flavour excitement to this pet treat, I've chucked in a heap spoon of peanut butter. This everyday supermarket item is a super food in its own right. Packed with protein, healthy fats for heart health; it also contains vitamin B, E and niacin.

Tip: Look out for pure peanut butter without added sugar and Xylitol. This is an artificial sweetener that can be quite harmful to dogs, even in small amounts. Try your local health food store as many make their own in store. Or read the labels of the supermarket brands. Do not add sugar or salt to any recipes. Your dog doesn't need it for flavour.

To make a tasty treat, LickiMats only take about 2 or 3 heap tablespoons to cover and you can use way less. The ingredient quantities make enough filler for about 4 LickiMats. The leftover I keep in the fridge or portion out and put in the freezer. If you have more than one LickiMat, you can load them up and stick them in the freezer ready to go.

For this recipe I used LickiMat Playdate. You could also use LickiMat Buddy. Here I've used four simple ingredients to create a yummy pet treat, perfect for all year round for your dog: coconut milk, sweet potato, rice and peanut butter.

Ingredients:
1 cup boiled or steamed rice
1 cup boiled or steamed sweet potato
1 tablespoon peanut butter
1/2 cup coconut milk

Place all ingredients in the blender and mix until smooth. Scoop onto your LickiMat with a silicone spatula or back of a spoon. Smooth off. Serve immediately, or leave in fridge for up to 4 days or freeze until ready to use.

Mackie's Taste Verdict: Despite having no meat and normally I don't like vegetables, this LickiMat was hard to fault. Nice texture with the rice. The stickiness of the peanut butter made it last longer and the flavour sensation of the sweet potato was unsurpassed. So therefore I give it 5 stars.
